
Vegan Cut-Out Sugar Cookies
These soft, buttery vegan sugar cookies easily come together with just 6 ingredients and bake into beautifully sweet, thick and chewy cut-out sugar cookies!

Ingredients

¾ cup unsalted vegan butter (room temp)

1 ½ cups powdered sugar

â…“ cup dairy free yogurt (room temp)

2 tsp. vanilla extract

2 ½ cups all purpose flour

½ tsp. baking powder
-
â…› tsp. salt (omit if using salted butter)

If making angels or gingerbread people, use 1 tsp. cinnamon and 4 tsp. cocoa powder in some of the dough to reflect the colors of humanity

​​Steps

Mix: in a large bowl, cream together the vegan butter and powdered sugar until light and fluffy (3 min.) Add the yogurt and vanilla and mix until incorporated.

Fold: sift in the flour and baking powder gently with a rubber spatula.

Chill: form into a flat disc, and wrap and chill in the refrigerator for 30 minutes. Prepare a large baking sheet with parchment paper or butter.

Shape: lightly flour a clean surface and following pin. Soften the dough for 10 minutes. Roll out to ¼ inch thick and cut out desired shapes. Use a thin spatula to transfer cut-outs to the pan. Chill the cookie sheet in the freezer while the oven preheats *

Bake: Preheat oven to 350. Bake for 12 minutes or until edges just begin to turn golden.
Tips:
*Decorate with “egg” wash and sprinkles before baking. (Egg wash is ½ egg plus ½ c water brushed on cookies before adding sprinkles and decorations. “Egg from Plants” is a great egg substitute.
OR frost cookies with vegan icing after cooling.
